Tuscan Bean Toast

Ingredients
- 2 cans white beans (Great Northern or cannelini)
- 1 can chopped tomatoes
- 1/2 bunch kale, washed and roughly torn
- 1/2 white onion, chopped finely
- 3 garlic cloves, minced
- Italian seasoning
- Olive oil
- Freshly ground pepper
- Salt
- Crusty bread
- Butter
- Eggs (optional)
Instructions
Heat olive oil in a pan over medium heat. Add onions and cook until translucent. Add garlic, tomatoes, and beans, season with salt, pepper, and Italian seasoning. Cook until tomatoes are jammy, smashing some of the beans with a spoon. Add kale, cook until tender. Meanwhile, toast and butter the bread. Spoon the bean mixture over the toast. Optionally, poach some eggs and lay the drained eggs over the beans on toast.
